Savory Oats

The idea of starting my morning off with something sweet like a bowl of cereal, sweetened yogurt, or maple syrup coated oats is enough to make me gag. I’m more of a savory kinda gal when it comes to most food. I will choose veggies over fruit or mac and cheese over a cookie on any day of the week. I used to love having a post-run bowl of oats with an apple, cinnamon, and nuts but that was before I had to wake up at an absurd hour to schlep my way into the office. Note- by absurd I mean 6:30 am. I am not a morning person. Now that my morning runs are a thing of the past I am craving something with a bit less carbohydrate. Enter- Savory Oats.

This tasty dish will start your day off with some anti-oxidant containing veggies, fill you up with plenty of fiber, and give you the carbs, fats, and proteins your body needs to fuel your morning. Plus, you can make a double batch of the oat mixture to keep in the refrigerator. Now during your busy week all you need to do is pop the oats in the microwave and fry up a few eggs. Nutritious and filling breakfast in less than 10 minutes. Did I mention it tastes good? Yeah, that too.

You can adjust the amount of oats and the number of eggs you use based on your activity and hunger level. Active morning? Add extra oats and/or eggs. Not so much? Use less. Eating disorder? Follow the meal plan prescribed by your dietitian or doctor. You can also switch up the veggies in the recipe, I rotate based on whatever I have in the house. You can add Brussels sprouts, broccoli, peppers, onions, mushrooms, greens, whatever floats your boat. The world is your oyster, go makes some pearls.

Ingredients

Instructions
  1. Cook oats according to package directions.
  2. While oats are cooking, sauté onion and garlic in 1/2 T butter over medium heat until almost soft.
  3. Add mushrooms, tomatoes, greens, salt, pepper, and thyme to onion and garlic, sauté until mushrooms and tomatoes are soft and greens are wilted, about 3 minutes.
  4. Remove vegetables from heat, mix into oats and add cheese (optional).
  5. In a separate pan, fry eggs in remaining butter over medium high heat.
  6. Separate oats into 2 servings, top with fried eggs and hot sauce (optional).
