oats
Can use whatever type you prefer- steel cut, whole rolled, instant, etc.

organic grass fed butter

garlic

seeded and diced

roughly chopped

Instructions
Cook oats according to package directions.
While oats are cooking, sauté onion and garlic in 1/2 T butter over medium heat until almost soft.
Add mushrooms, tomatoes, greens, salt, pepper, and thyme to onion and garlic, sauté until mushrooms and tomatoes are soft and greens are wilted, about 3 minutes.
Remove vegetables from heat, mix into oats and add cheese (optional).
In a separate pan, fry eggs in remaining butter over medium high heat.
Separate oats into 2 servings, top with fried eggs and hot sauce (optional).
