Perfect Tailgating Chili

There are entire festivals devoted to the wonderful food that is chili. There are about a bajillion different ingredients you can add to it. This is my most recent twist on a traditional chili but I will soon be coming out with a white chicken chili to fill your belly through the cold winter months! Mashed Curry White Sweet Potatoes

Mashed Curry White Sweet Potatoes

Ingredients

  • 2 large Jersey white sweet potatoes, peeled and diced
  • 1 T butter
  • 2 T coconut milk or bone broth
  • 1/2 tsp curry powder
  • 1/2 tsp Himalayan salt
  • 1/2 tsp ground black pepper

Instructions

  1. Boil potatoes until soft, remove from heat and drain
  2. Return potatoes to pot, add remaining ingredients
  3. Mash potatoes to desired consistency (I like mine a little chuncky)
  4. Serve warm
